Today, the Organic Family Estate, BARONE RYOLO dal 1824 is a young
and entrepreneurial firm which manages the Fontanelle Estate.
Besides wine and vegetables, we produce an Organic Extra Virgin Olive Oil. This special cold pressed oil is a blend of many olive varieties native to Sicily and is obtained directly through the percolation method at temperatures no larger than of 27°C.
The cultivar are: OGLIAROLA MESSINESE, NOCELLARA, BIANCOLILLA, CAROLEA.
The oil extracted following official organic agricoltural guidelines, it has a strong and spicy taste and at the same time a fruitful flavour, with hints of almonds, peppers, tomatoes and the perfume of Sicily’s natural wild plants, of the likes of
“woolly thistle”.
Moreover, we have transformed the old barns and the outbuildings in the “Agriturismo Fontanelle”, both agriturismo and restaurant with biological ingredients authorized by the Region of Sicily. These buildings, dated 1880, have been renovated with the aim of preserving the old treasures located in them: stone and wooden screwpresses as well the
whole architectural infrastructure.
